An example of this menu is the "Poncha and Gamba da Costa" dish. Inspired by the life of Madeiran fishermen, the Audax has brought the emblematic poncha beverage to the dish, combining the traditional Poncha à Pescador, which served as sustenance during fishing, with Gamba da Costa, representing the bait used by fishermen. This dish is a real tribute to the historical connection between poncha and Madeira's fishermen. Through this dish, the AUDAX offers an experience that captures the essence of fishing life, taking guests on a sensory journey through Madeira's roots and traditions.
