Chef from Mallorca in Madeira

Chef of choice for this year’s gastronomic weekend at Casa Velha do Palheiro is Rafel Perelló.

For several years now the Casa Velha do Palheiro celebrates the fact that it belongs to the Relais & Château network by hosting a gastronomic weekend which provides the restaurant team with the opportunity to work alongside a guest chef from a restaurant or hotel. The only requirement is that it belongs to Relais & Châteaux and this year the chosen dates are the 23rd and 24th of October.

The guest is Rafel Perelló from Son Brull in Mallorca, a boutique hotel and spa located near to Porto de Pollença on the northeast of the Spanish island.

Rafel Perelló fell in love with cooking long before he graduated as a cook at university. His first job was at a baker’s helping pastry chefs prepare traditional delicacies of Mallorca. It was there that he decided that this was the route he wanted to follow and began his journey in the world of cuisine whilst he studied.

Having worked for restaurants which were awarded Michelin stars was a learning curve and a motivation in itself. His studies and career path led him to Germany before he returned to his native Mallorca and worked his way to kitchen chef at the 365 restaurant in Son Brull, two years ago.

The cuisine at 365 is described as the result of the creativity of all the chefs who have once worked there. The restaurant combines the most sophisticated techniques with traditional cuisine and local products, creating dishes that are full of texture and flavour.
